Splitting can occur during growing or curing. They are not "used" beans. Non-split beans are known as whole beans. Grade A beans are best for cooking where you want to slice open the bean and scrape out the caviar. They contain about 30% moisture. You should be able to tie them in a knot. Grade B beans are for making vanilla extract and contain about 20% moisture. If you bend them they will usually split, but they should not snap like a dried twig. Near Gourmet Grade A/B, as the name implies, fall somewhere between Extract Grade B beans and Gourmet Grade A beans. They can be used for making extract. They may be suitable for cooking. Beans are 5 to 7 inches long, except for the Tahitian Grade B beans, which are 4 to 6 inches in length. Directions for making vanilla extract are included with every order.
